Taken from the fore end of the animal, just below the shoulder, this is among the tougher cuts of beef, although enjoyed by many for its excellent flavour. Brisket has a high proportion of fat and tastes best when pot-roasted, braised or stewed. It is also used to make bacon, smoked beef and pulled beef. Remember, you need patience to cook a brisket.
