Not to be confused with ketchup, this classic tomato sauce (salsa di pomodoro in Italian) is used as base for sauces for Mexican salsas, Italian Spaghetti and meatballs or tomato soup. It consists of chopped tomatoes sautéed in olive oil and simmered until they lose their raw flavor, seasoned to taste with salt and onion.
