Couscous is a traditional food from Northern African cultures and consists of small balls of durum wheat flour. It has since become very common in France, Spain, Portugal and Italy. Couscous can be a main source of selenium and potassium in diet, and is a healthier alternative to rice as one cup of cooked couscous has fewer calories and carbohydrates, but more fiber, than white rice.
