Carnaroli also known as the "King of Rices" is a medium-grained rice grown in northern Italy. Carnaroli is used for making risotto, differing from the more common arborio rice due to its higher starch content, firmer texture, as well as its ability to maintain its shape better than other types of rice during the slow cooking process of making risotto.
